The conservative case is not automatically a failure if it builds a valuable brand or strategic wholesale footprint, but it is weak as a pure cash investment. The base case is more credible for a disciplined local operator with proven subscriptions and selected wholesale accounts. The upside case should not be used for funding decisions unless demand has already been demonstrated and capacity expansion is fully costed.
Payback stretches when the founder excludes pre-opening salary, underestimates build-out, treats initial inventory as a one-time cost, ignores packaging deposits, assumes instant full volume, or uses EBITDA before maintenance and debt service. It also stretches when a retailer order looks profitable but creates receivables and spoilage faster than cash.

A reasonable modeled base-case payback range for a well-run operation after allowing for ramp-up. It is not guaranteed and should be stress-tested against lower yield, higher produce cost, weaker retention, and delayed collections.
The final decision is not whether cold-pressed juice can command a premium price. It can. The decision is whether the company can repeatedly convert produce, labor, packaging, and cold storage into saleable bottles with enough contribution, fast enough cash collection, and low enough waste to repay the investment.
