Food inflation deserves its own sensitivity. The National Restaurant Association's food-cost tracker reported renewed wholesale food-price pressure in 2026, so the model should not hold ingredient prices flat for five years. How Many Orders Are Needed to Break Even?
Break-even is not a revenue guess. It comes from fixed costs and contribution margin. Suppose the store has $30,000 of monthly fixed and semi-fixed costs after separating food, packaging, card fees, delivery commissions, and other order-linked costs. If the blended contribution margin is 64%, monthly break-even revenue is about $46,875.
Example: $30,000 ÷ 64% = $46,875 per month. At a $17 average check, that equals about 2,758 monthly orders.
If the concept operates 30 days per month, that is roughly 92 orders per day. If it opens 26 days, it needs about 106. That difference matters because a lunch-focused urban kiosk may have only a few strong selling hours. The model should split orders by daypart, not spread them evenly across the day.

The average check is often the cleanest lever. Moving from $17.00 to $18.50 through beverage attachment, combo design, or a premium protein adds $1.50 per order without requiring another customer. At 3,000 monthly orders, that is $4,500 of added revenue. But discounting works in reverse: a 10% promotion may require a large increase in orders just to preserve contribution dollars.
Labor Scheduling Is a Margin System, Not Just a Staffing Task
Indian street food often carries hidden labor in marination, chutneys, batters, dough, frying, garnish preparation, cooling, and end-of-day cleaning. Build the schedule around stations and prep windows
Separate prep from service. Record batch prep hours for chutneys, batters, fillings, breads, proteins, and desserts.

Track overtime weekly. One recurring callout or late close can create a permanent overtime leak.
Model owner labor honestly. An owner working 60 hours is not free labor. Include a market-rate manager replacement cost when evaluating true profitability.
Payroll compliance also varies by state. Federal rules permit a limited tip credit under certain conditions, but many states require full state minimum wage before tips. Owner earnings are what remains after operating costs, debt service, taxes, maintenance capital spending, and a reasonable reserve. Revenue is not income, and store operating profit is not automatically available for distribution. A founder who also works as general manager may receive two economic benefits: market-rate compensation for the job and a return on invested capital. Keep them separate.

The base case supports an owner-manager wage and a modest return, but only if the wage is already included in labor expense. The upside case needs sustained volume, menu discipline, and enough capacity to avoid labor inefficiency.

A limited-service restaurant usually collects cash immediately, which sounds favorable. But payroll, rent, card settlements, sales-tax remittances, vendor terms, and delivery-platform payouts move on different schedules. During opening months, the business can report positive gross profit and still run short because sales are below plan while the labor schedule and rent are already fully active.

Delivery can raise sales but weaken cash generation. A $17 order that carries 30% food and packaging cost plus a 25% platform commission leaves only $7.65 before labor and fixed costs. The same order collected directly may leave $11.90 before labor and fixed costs. This does not mean delivery is always bad; it means delivery needs separate pricing, packaging, menu selection, and contribution reporting.
Food safety is also a financial issue. A failed inspection, allergen incident, or temperature-control problem can create discarded inventory, lost selling days, refunds, legal exposure, and reputation damage. If CAC is $18 and contribution per visit is $8, the customer must complete 2.25 visits before marketing is repaid. A one-time coupon customer has not paid back.
What Financial Sequence Should Be Followed Before Opening?
The order of decisions matters. Founders often select a site, sign a lease, and then discover that the required sales volume is unrealistic. A better process starts with demand, menu economics, and capacity, then works backward to rent and investment.
Define the format and customer occasion. Decide whether the core is lunch, late-night, weekend market traffic, food-hall visits, delivery, catering, or a mix. Each has a different average check and capacity profile.
Cost a narrow menu. Build recipe cards, packaging cost, prep labor, station time, and yield. Include chutneys, garnish, oil, condiments, and waste, not only the main protein or starch.
Estimate local demand. Count relevant competitors, lunch population, residential density, parking, delivery radius, event traffic, and Indian-diaspora demand without assuming the concept must rely only on Indian customers.

Simple payback ignores the time value of money and resale value, so investors may also calculate internal rate of return and net present value. Still, it is a useful reality check.
