Model break-even on contribution margin, not invoice revenue. Turnkey invoices include pass-through materials; only revenue after job-variable materials, labor, sanitation, and utilities covers fixed overhead.

Compliance, Product Safety, and the Cost of Getting a SKU Ready
For shelf-stable sauces, compliance is part of unit economics. Depending on formulation and process, the plant may need facility registration, CGMPs, hazard analysis, preventive controls, supplier and allergen controls, traceability, label review, scheduled-process filings, and state or local approvals.
FDA says covered facilities generally need a written food-safety plan, hazard analysis, risk-based preventive controls, and qualified employees.
