Labor should be built from paid hours, not a percentage alone. The U.S. Bureau of Labor Statistics reported a May 2024 median wage of $17.19 per hour for cooks, before payroll taxes and benefits. The fix is not always higher prices. The first levers are menu engineering, faster assembly, fewer low-selling ingredients, better prep sequencing, pre-portioned proteins, tighter event selection, and more guaranteed catering.
