The zero waste promise is financially credible only when the store measures what leaves the building without being sold. Dry staples may sit for 30-60 days but lose little value. Produce may turn in days but demands daily ordering and markdown discipline. Reusable bottles can hold margin yet sit for months. A single blended inventory-turn assumption hides these differences. Build separate schedules for dry grocery, liquids, fresh food, household refill, and accessories.

A paper payback can look attractive if the model uses mature-year profit from day one.
