A pizza restaurant can look busy and still leave little owner cash. The National Restaurant Association reported that limited-service restaurants had a 32.4% median food and nonalcoholic beverage cost in 2024, while profitable limited-service respondents carried 30.0% median labor cost. Those are segment benchmarks, not pizzeria promises. The model therefore uses 32.4% as a food-cost anchor, then adds a reasoned 7.6 points for packaging, card processing, waste, and blended delivery-channel direct costs to reach 40% non-labor direct cost and a 60% gross margin. Here is the sensitivity that matters: at $100,000 of monthly sales, a two-point gross-margin slip from 60% to 58% removes $2,000 of monthly profit before reserves. The calculator deliberately excludes owner pay from labor and assumes the owner performs the operating-manager role. If the base store added only a $74,880 manager salary, before employer payroll taxes and benefits, monthly profit before reserves would drop from $9,000 to roughly $2,760. After the same 34% combined reserves, owner residual would fall to about $21,864 per year.
That distinction is central to “owner income.” An active owner is being compensated partly for labor; a passive owner must first pay market-rate management. If the owner is on payroll, that amount belongs in labor cost and the residual distribution must be reduced. Never count the same value as both salary and profit.

They are not interchangeable. The model's $9,000 monthly “profit before reserves” is a cash-oriented planning figure after the modeled $4,500 debt service, not GAAP net income or EBITDA. From that $9,000, the calculator holds back $2,160 for tax and $900 for reinvestment, leaving $5,940.
The 24% tax reserve is deliberately a planning placeholder.
